Instructions
Grease and flour an 8-inch square baking pan. Preheat your oven to 350°F (175°C).
In a large bowl, whisk together the flour, sugar, and baking powder until combined.
Add the milk, vegetable oil, eggs, and vanilla extract to the dry mix. Whisk gently until just combined—avoid overmixing to keep the cake light.
Pour the batter evenly into the prepared pan. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes. Then invert onto a wire rack to cool completely.
Dust with powdered sugar or frost with your favorite icing before serving.
