Hot peach cobbler

Ingredients:

  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 2 cups sugar, divided
  • 1 tablespoon baking powder
  • A pinch of salt
  • 1 cup milk
  • 2 cans of peaches, undrained (the size of the cans is unspecified, typically around 15 ounces each)
  • 1 tablespoon lemon juice
  • Ground cinnamon or nutmeg, to taste

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. Place the butter in a 9×13 inch baking dish and melt it by placing the dish in the oven as it preheats. Keep an eye on it to make sure the butter doesn’t brown or burn.
  3. In a medium mixing bowl, combine the flour, 1 cup of sugar, baking powder, and salt. Stir in the milk until the mixture is just combined. It’s okay if the batter is a little lumpy.
  4. Once the butter has melted, remove the baking dish from the oven and pour the batter over the butter. Do not stir; just let the batter settle on top.
  5. In a medium saucepan, mix the remaining 1 cup of sugar with the peaches (including their juices) and lemon juice. Bring the mixture to a boil over high heat, stirring constantly.
  6. Once the peach mixture is boiling and the sugar is completely dissolved, carefully pour it over the batter in the baking dish. Again, do not stir; the batter will rise up over the peaches during the baking process.
  7. If desired, sprinkle the top with a light dusting of ground cinnamon or nutmeg for added flavor.
  8. Bake in the preheated oven for 40 to 45 minutes, or until the top of the cobbler is golden and the filling is bubbly.
  9. Remove the cobbler from the oven and let it cool slightly. It’s best served warm, perhaps with a scoop of vanilla ice cream or a dollop of whipped cream.

Enjoy your homemade peach cobbler!
