Ingredients

  • 3 cups leftover brown or white rice, cooked
  • 1 lb large shrimp, peeled and deveined

  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/8 tsp cayenne pepper (adjust to taste)
  • 1/4 tsp kosher salt
  • Freshly ground black pepper, to taste
  • 2 large egg whites, beaten
  • 1 large whole egg, beaten
  • 1/2 medium onion, chopped
  • 2 cloves garlic, diced
  • 5 medium scallions, chopped, whites and greens separated
  • Oil spray
  • 1 tbsp sesame oil
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • 4 tsp soy sauce (adjust to taste)
  • 1 tsp Asian fish sauce (or more soy sauce)

Instructions

1. Season the Shrimp:

  • In a bowl, season the peeled and deveined shrimp with cayenne pepper, chili powder, paprika, salt, freshly ground black pepper, and garlic powder. Set aside.

2. Cook the Eggs:

  • In a hot wok or large skillet over medium-high heat, spray a little oil.
  • Pour in the beaten egg whites and whole egg.
  • Cook the eggs until set, about 1 to 2 minutes. Remove from the pan and set aside.

3. Sauté Aromatics:

  • Increase the heat to high.
  • In the same wok or skillet, add sesame oil and sauté chopped onions, scallion whites, diced garlic, and crushed red pepper flakes for about 1-2 minutes, until fragrant.
