Ingredients:

  • 1 tablespoon dried yeast
  • 1/4 cup + 2 teaspoons superfine/caster sugar
  • 1/2 cup warm water
  • 4 cups (480 grams/16.9 ounces) bread flour
  • 1 cup (236ml) warm milk
  • 3 1/2 tablespoons butter, melted
  • 2 eggs, beaten

Instructions:

  1. Activate the Yeast:
    • In a large mixing bowl, combine 1 tablespoon of dried yeast, 2 teaspoons of superfine/caster sugar, and 1/2 cup of warm water. Mix well with a fork and let it sit for about 5 minutes until it becomes thick and frothy.
  2. Prepare the Dry Ingredients:
    • In another large bowl, sift 4 cups of bread flour and add 1/4 cup of caster sugar. Mix them together.
  3. Prepare the Wet Ingredients:
    • In a separate jug, mix 1 cup of warm milk with 3 1/2 tablespoons of melted butter. Add 2 beaten eggs and combine thoroughly.
  4. Combine Wet and Dry Ingredients:
    • Gently pour the milk mixture and the yeast mixture into the dry ingredients. Use a spatula or spoon to mix everything together. Be careful not to overmix; just combine until everything forms a sticky dough. Towards the end, use your hands to bring it all together.
  5. Proof the Dough:
    • Cover the dough with a damp cloth and place it in a warm spot for 1.5 to 2 hours. The dough should rise to nearly triple its volume.
  6. Shape the Rolls:
    • After proofing, gently degas the dough and place it on a work surface. Mix it for about 20 seconds and shape it into a rectangular square. Cut the dough into 12 equal portions, ensuring they are of the same size. Shape them into tight balls.
  7. Second Proof:
    • Line the dough balls in a parchment-lined baking dish. Cover them with a cloth and let them rest for another 45 minutes, allowing them to increase in volume.
  8. Bake:
    • Preheat your oven to 200°C (390°F). Bake the rolls for 15 minutes or until they turn golden brown.
  9. Final Touch:
    • As soon as they come out of the oven, brush the top of the rolls with melted butter to create a lovely crust and shine.
  10. Serve:
    • Transfer the rolls from the tin onto a wire rack to cool slightly. Then, simply tear them apart and serve. Enjoy your Soft No Knead Bread Rolls with your favorite spread.
