Cheese Potato & Smoked Sausage Casserole

Ingredients:

  • 3 cups potatoes, peeled, boiled, and diced while cool
  • 4 teaspoons butter
  • 4 teaspoons flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 kilo of Velveeta cheese, cut into cubes
  • 1/2 cup shredded sharp cheddar cheese
  • 1 pound skinless smoked sausage
  • 1/8 teaspoon paprika

Instructions:

  1. Prepare the Smoked Sausage: Cut the skinless smoked sausage in half lengthwise, then into ½-inch “half-moon” pieces. Cook in a cast-iron skillet over medium heat for about 15 minutes, stirring frequently until it’s lightly browned.
  2. Prepare the Potatoes: Meanwhile, place the cooked and diced potatoes into a 2-quart saucepan. Add the cooked smoked sausage pieces and stir gently.
  3. Prepare the Cheese Sauce: In another saucepan, melt the butter over medium heat. Stir in the flour and cook for a couple of minutes to form a roux. Gradually whisk in the milk, salt, and pepper until the mixture is smooth and begins to thicken. Add the Velveeta cheese cubes and continue to stir until the cheese is fully melted and the sauce is creamy.
  4. Combine the Sauce with Potatoes and Sausage: Pour the creamy cheese sauce over the potatoes and smoked sausage, ensuring an even distribution.
  5. Add Toppings: Sprinkle shredded sharp cheddar cheese evenly on top of the casserole. Then, lightly sprinkle paprika over the cheese for added flavor and color.
  6. Bake: Preheat your oven to 350°F (175°C). Place the casserole in the oven and bake for 35-45 minutes or until the top is golden brown and the casserole is bubbly.
  7. Serve: Remove from the oven, let it cool for a few minutes, and then serve your delicious Cheese Potato & Smoked Sausage Casserole. It pairs wonderfully with a side salad or steamed vegetables.
