  • 1 can (14 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cups shredded mozzarella cheese

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Meatballs:
    • In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped fresh parsley, egg, minced garlic, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
    • Shape the mixture into meatballs, approximately 1 inch in diameter. You should get around 20-24 meatballs.
  3. Brown the Meatballs:
    • Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until browned on all sides, about 5 minutes.

  5. Assemble the Casserole:
    • Place the meatballs in a greased casserole dish.
    • Pour the tomato and vegetable mixture over the meatballs, ensuring they are well coated.
  6. Bake the Casserole:
    • Cover the casserole dish with foil and bake in the preheated oven for 25 minutes.
    • Remove the foil and sprinkle the shredded mozzarella cheese over the top of the casserole.
    • Return it to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Serve and Enjoy:
    • Remove the casserole from the oven and let it cool for a few minutes before serving.
    • Garnish with additional chopped parsley, if desired.
