Ingredients:

  • 2 pounds good-quality steak (such as ribeye), cut into 1 1/2-inch pieces
  • 10 small button mushrooms
  • 1 large red onion, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 2 medium-sized potatoes, cut into 1 1/2-inch pieces
  • 1 bunch of asparagus
  • 5 tablespoons minced garlic
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup extra-virgin olive oil (EVOO)
  • 2 tablespoons chopped parsley
  • Pinch of red pepper flakes

Directions:

  1. Prepare the Marinade:
    • In a bowl, combine the extra-virgin olive oil (EVOO), salt, black pepper, minced garlic, onion powder, chopped parsley, Worcestershire sauce, and a pinch of red pepper flakes. Mix well to create the marinade.
  2. Marinate the Steak:
    • Place the steak pieces into a heavy-duty resealable bag.
    • Pour the marinade into the bag with the steak.
    • Seal the bag and massage it gently to coat the steak evenly with the marinade.
    • Allow the steak to marinate for at least 2 hours, or overnight in the refrigerator.
  3. Brown the Potatoes:
    • In a well-oiled hot pan, lightly brown the potato pieces on all sides.
    • Set aside once they’re browned.
  4. Prepare the Asparagus:
    • Toss the asparagus with a bit of salt, pepper, and EVOO.
    • Grill the asparagus for about 3-5 minutes until tender.
  5. Prepare the Grill:
    • Preheat your grill to medium heat and brush it with EVOO to prevent sticking.
  6. Assemble the Kabobs:
    • Thread the marinated steak, onion, pepper, and browned potato alternately onto skewers.
  7. Grill the Kabobs:
    • Grill the kabobs for about 3 minutes on each side for medium-well steak, or until your desired level of doneness is achieved.
  8. Serve:
    • Remove the steak kabobs from the grill and serve immediately.
    • Enjoy your hearty steak kabobs, and consider finishing them off with a drizzle of garlic butter if desired!

These grilled steak kabobs with mushrooms, peppers, and onions are a delicious and satisfying dinner option, perfect for your next outdoor gathering or family meal.
