Copycat Taco Bell Mexican Pizza

Ingredients:

  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • Vegetable oil, as needed
  • 8 taco size flour tortillas
  • 1 (15 oz) can refried beans
  • 1 (10 oz) can red enchilada sauce
  • 2 cups shredded Mexican cheese blend

For Topping:

  • Tomatoes, diced
  • Green onion, sliced

Instructions:

  1. Preheat Oven:
    • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cook Ground Beef:
    • In a large skillet over medium-high heat, brown the ground beef, breaking it up as it cooks. Once cooked, drain excess grease, then add the taco seasoning and 1 cup of water. Simmer until most of the liquid cooks off.
  3. Crisp Tortillas:
    • In a separate skillet over medium heat, heat about 2 tablespoons of vegetable oil. Cook tortillas one at a time until crispy, flipping frequently, for about 3-4 minutes each. Add more oil as needed and set browned tortillas aside.
  4. Prepare Pizza Layers:
    • Warm refried beans until spreadable. Spread refried beans on 4 tortillas, then top with the seasoned ground beef. Place the remaining tortillas on top.
  5. Add Enchilada Sauce and Cheese:
    • Cover each assembled pizza with about 2 tablespoons of enchilada sauce. Sprinkle each with 1/2 cup of shredded Mexican cheese.
  6. Bake:
    • Place the assembled pizzas on the prepared baking sheet and bake until the cheese is melted, approximately 8-10 minutes.
  7. Top and Serve:
    • Top the pizzas with diced tomatoes and sliced green onions. Serve and enjoy your homemade Taco Bell-style Mexican Pizza!

  • Customize with additional toppings such as sour cream, sliced olives, or jalapeños based on personal preference.
