Sausage Green Bean Potato Casserole

  • 1½ lbs sausage (kielbasa or smoked sausage), sliced ¼” thick
  • 2 lbs baby creamer potatoes, washed and sliced in half
  • 2 (15 oz) cans green beans, drained
  • ⅛ cup vegetable oil
  • ¼ cup butter
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 1 tsp Slap Ya Mama®️ seasoning (or your preferred Cajun seasoning)
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp red pepper flakes
  • ¼ cup water

Instructions:

  1. Preheat your oven to 400°F (200°C) and spray a 9×13-inch baking dish with non-stick cooking spray.
  2. Wash the baby creamer potatoes, cut them in half, and place them in a sealable gallon-sized baggie.
  3. Add vegetable oil, Slap Ya Mama®️ seasoning (or Cajun seasoning), garlic powder, black pepper, and red pepper flakes to the baggie. Shake the bag to coat the potatoes evenly with the seasoning mixture.
  4. In a large frying pan, add the sausage and water. Cook over medium-high heat until the sausages have browned, and most of the water has evaporated. Remove the sausage from the pan and set it aside.
  5. In the same frying pan, melt the butter, then add chopped onions and minced garlic. Cook until the onions become translucent. Let the onion mixture cool for a few minutes.
  6. Once the onion mixture has cooled slightly, add it to the baggie with the seasoned potatoes and sausage. Shake the bag to mix all the ingredients evenly.
  7. Add the drained green beans to the baggie, shake again to mix everything, and then empty the contents into the prepared baking dish.
  8. Cover the baking dish with foil and place it in the preheated oven. Bake for 40 minutes or until the potatoes are tender.
  9. Carefully remove the casserole from the oven, and it’s ready to enjoy!
