Cheesy Scalloped Potatoes Supreme

Ingredients:

  • 4 cups thinly sliced potatoes
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1⁄2 cups milk
  • 1 teaspoon salt
  • 1 dash cayenne pepper
  • 1 cup grated sharp cheddar cheese
  • 1⁄2 cup grated cheese (for sprinkling on top)
  • Paprika (for color)

Directions:

  1. In a small saucepan, melt 3 tablespoons of butter and blend in 3 tablespoons of flour. Allow it to sit for a minute.
  2. Add all of the cold milk, stirring with a whisk. Season the mixture with 1 teaspoon of salt and a dash of cayenne pepper. Cook the sauce on low heat until it becomes smooth and starts to boil, stirring occasionally with a whisk.
  3. Reduce the heat and stir in 1 cup of grated sharp cheddar cheese until it’s well incorporated.
  4. Place half of the thinly sliced potatoes in a lightly greased one-quart casserole dish.
  5. Pour half of the cheese sauce over the first layer of potatoes.
  6. Repeat the process with a second layer of potatoes and cheese sauce.
  7. Sprinkle the remaining 1/2 cup of grated cheese on top for an extra cheesy touch.
  8. Optionally, sprinkle some paprika on top for color and flavor.
  9. Bake the casserole uncovered for about 1 hour at 350°F (175°C).
  10. Once the top is golden brown and the potatoes are tender, remove from the oven.
  11. Let it cool for a few minutes, then serve your delicious Cheesy Scalloped Potatoes Supreme
