Creamy Cucumber Salad

Ingredients:

  • 4 large cucumbers
  • 1 medium sweet onion
  • 1 cup mayonnaise
  • 1/2 cup white sugar
  • 1/4 cup white vinegar
  • Salt and pepper to taste

Directions:

  1. Wash, peel, and thinly slice the 4 large cucumbers. For uniform slices, you can use a mandoline.
  2. Thinly slice the medium sweet onion.
  3. Place the sliced cucumbers and onions in a ceramic, glass, or plastic bowl with a lid.
  4. In a small bowl, combine the mayonnaise, sugar, and white vinegar. Mix until smooth.
  5. Pour the mayonnaise mixture into the bowl with the cucumbers and onions. Mix well to combine.
  6. Season with salt and pepper to taste.
  7. Cover the bowl with a lid and shake lightly to coat the cucumbers evenly.
  8. Allow the salad to marinate in the refrigerator for a minimum of 6 hours (overnight is preferable).
  9. Serve chilled and refrigerate any leftovers.
