Vegetable Beef Soup

Ingredients:

  • 2 pounds ground beef
  • Carrots, celery, onion (chopped)
  • 4 potatoes (peeled, cubed)
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) crushed whole tomatoes
  • 1 can (15 ounces) dry peas
  • 1 can (15 ounces) green beans (drained)
  • Salt, pepper, ground thyme (to taste)
  • 1/4 cup water (as needed)

Instructions:

  1. Cook ground beef until browned, then drain excess fat.
  2. Add carrots, celery, onion to the beef. Cook until vegetables are tender.
  3. Add potatoes, tomato sauce, crushed tomatoes, dry peas, and green beans.
  4. Season with salt, pepper, and thyme.
  5. Add water if needed to moisten the mixture.
  6. Bring to a boil, then simmer with a lid until potatoes are tender (about 1 hour).
