Deviled Egg Pasta Salad Recipe

 

Ingredients:

  • 8 oz. macaroni pasta
  • 6 hard-boiled eggs, (yolks removed)
  • 1/2 cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon ketchup
  • 1 tablespoon white vinegar
  • 1 tablespoon granulated sugar
  • 1 small red onion, chopped
  • 2 celery ribs, chopped
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Green onions, for garnish

Instructions:

  1. Prepare the Pasta: Cook the macaroni according to the package instructions. Once cooked, drain and rinse under cold water. Transfer the cooked pasta to a large bowl and set aside.
  2. Prepare the Eggs: Cut the hard-boiled eggs in half and remove the yolks. Place the yolks in a small bowl for the dressing and set aside. Chop the egg whites and add them to the bowl with the cooked pasta.
  3. Add Vegetables: To the bowl with the pasta and chopped egg whites, add the chopped red onion and celery. Mix gently to distribute.
  4. Make the Dressing: In the small bowl with the egg yolks, mash the yolks with a fork until they are crumbled. Add the mayonnaise, mustard, ketchup, white vinegar, sugar, paprika, salt, and pepper to the yolks. Stir until you have a smooth, creamy dressing.
  5. Combine: Pour the dressing over the pasta mixture. Gently stir until everything is well coated with the dressing. Taste and adjust seasoning if necessary.
  6. Chill: Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld and the salad to chill thoroughly.
  7. Garnish and Serve: Before serving, garnish the pasta salad with chopped green onions for a fresh, colorful finish.

Tip: For an extra touch of flavor and color, sprinkle a little extra paprika over the top before serving.
