Weight Watchers Cream Cheese Cranberry Loaf

 

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup granulated sugar substitute (such as Swerve or Stevia)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup plain non-fat Greek yogurt
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cranberries

Instructions:

  1. Preparation: Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing and flouring it or coating it with cooking spray.
  2. Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar substitute, baking powder, baking soda, and salt.
  3. Wet Ingredients: In a large mixing bowl, combine the unsweetened applesauce, plain non-fat Greek yogurt, softened butter, egg, and vanilla extract. Mix until well combined.
  4. Combine Ingredients: Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the fresh or frozen cranberries until evenly distributed in the batter.
  5. Prepare Cream Cheese Swirl: In a separate bowl, beat together the softened fat-free cream cheese, powdered sugar substitute, and vanilla extract until smooth.
  6. Layer and Swirl: Pour the batter into the prepared loaf pan. Drop spoonfuls of the cream cheese mixture onto the batter in the loaf pan, then use a knife to swirl the cream cheese into the batter to create a marbled effect.
  7. Bake: Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.
