Avocado, Mozzarella, and Tomato Grilled Cheese

 

Ingredients:

  • 1/2 avocado, sliced
  • 4 slices mozzarella cheese
  • 4 cherry tomatoes, sliced in half
  • 2 slices multigrain bread (such as Ezekiel sprouted grain bread)
  • Butter

Instructions:

  1. Butter the outside layers of the bread slices.
  2. Place one slice of bread, buttered side down, in a frying pan heated over medium heat.
  3. Layer the mozzarella cheese, sliced cherry tomatoes, and avocado slices on top of the bread slice in the pan.
  4. Place the other slice of bread on top, buttered side up.
  5. Flip the sandwich after a few minutes, once the bottom is golden brown.
  6. Cook until both sides are golden brown and the cheese is melted and gooey on the inside.
  7. Remove from the pan, slice if desired, and serve hot.
