Low Carb Cauliflower Salad

Ingredient

  • 1 head of cauliflower, steamed or boiled until tender in bite-size pieces
  • 6 boiled eggs
  • 1/3 cup miracle whip or mayonnaise (avoid light versions for fewer carbs)
  • 3 tablespoons mustard
  • 3 tablespoons pickle relish
  • 1/8 cup chopped onion (uncooked), adjust to taste
  • Salt and pepper to taste
  • Egg slices and parsley for garnish (optional)

Instructions:

  1. Steam or boil the cauliflower until tender, then cut it into bite-size pieces.
  2. Boil the eggs until cooked, then peel and separate the yolks from the whites. Mash the yolks and chop the whites into small pieces.
  3. In a bowl, combine the mashed egg yolks, chopped egg whites, miracle whip or mayonnaise, mustard, pickle relish, chopped onion, salt, and pepper. Mix well.
  4. Add the steamed or boiled cauliflower to the bowl and toss until everything is evenly coated with the dressing.
  5. Garnish with egg slices and parsley, if desired.
  6. Chill the salad overnight in the refrigerator to allow the flavors to meld.
