Beef Tips with Mushroom Gravy

Ingredients:

  • 1 1/2 lbs beef sirloin tips, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Chopped fresh parsley for garnish (optional)

Directions:

  1. Season the beef tips with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the beef tips and cook until browned on all sides, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, add diced onion and minced garlic. Cook until softened and fragrant, about 2-3 minutes.
  4. Add sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5 minutes.
  5. Sprinkle flour over the mushrooms and stir to coat evenly. Cook for an additional 1-2 minutes.
  6. Gradually pour in beef broth, Worcestershire sauce, and dried thyme, stirring constantly to prevent lumps.
  7. Return the beef tips to the skillet and bring the mixture to a simmer. Cook for 10-15 minutes, or until the gravy has thickened and the beef is cooked through.
  8. Taste and adjust seasoning if necessary.
  9. Garnish with chopped fresh parsley, if desired, and serve hot.

Recipe Tips and Variations:

  • Add a splash of balsamic vinegar or soy sauce for extra flavor.
  • Incorporate carrots, celery, or bell peppers for additional color and texture.
  • For a thicker gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of water and add it during the last few minutes of cooking.
