Marry Me Chicken

Marry Me Chicken is a savory and creamy chicken dish typically made with bone-in, skin-on chicken thighs or breasts, cooked in a creamy tomato sauce with herbs and garlic. It’s named “Marry Me Chicken” because it’s so delicious that some people humorously claim it could make someone propose marriage after tasting it. While the traditional recipe calls for bone-in, skin-on chicken, you can use boneless, skinless chicken thighs or breasts if you prefer. Just adjust the cooking time accordingly as boneless chicken cooks faster.

Ingredients:

  • 6 Chicken Thighs
  • Seasonings to taste:
    • Onion powder
    • Garlic powder
    • Cajun seasoning
    • Pepper
    • Paprika
    • Italian herbs
    • Olive oil

Sauce:

  • 2 tbsp Butter
  • 2 tbsp fresh minced Garlic
  • 1/2 cup Chicken broth
  • 1/3 cup Heavy whipping cream
  • Sun-dried Tomatoes
  • 1/2 cup Fresh Shredded Parmesan or Italian cheese
  • Salt
  • Pepper
  • Italian herbs

Instructions:

  1. Season chicken thighs with onion powder, garlic powder, Cajun seasoning, pepper, paprika, and Italian herbs to your liking.
  2. Pan-sear seasoned chicken thighs on both sides with olive oil in a skillet until golden brown. Then transfer them to a separate pan.
  3. In the same skillet, add butter and minced garlic, and cook for about 3 minutes.
  4. Add chicken broth, sun-dried tomatoes, and whipping cream to the skillet. Season with salt, pepper, and Italian herbs. Allow the mixture to simmer.
  5. Stir in shredded Parmesan or Italian cheese until melted and well combined with the sauce.
  6. Pour the sauce over the chicken thighs in the separate pan.
  7. Bake in the oven at 400 degrees Fahrenheit for 30-35 minutes.
  8. Serve the chicken over mashed potatoes.
