One Point Blueberry Muffins

Ingredients:

  • 1 1/2 cups Kodiak Cakes Protein Pancake Power Cakes, Flapjack and Waffle Baking Mix
  • 1 teaspoon baking powder
  • 1/2 cup unsweetened applesauce
  • 1/2 cup water (adjust as needed for batter consistency)
  • 1/4 cup zero-point granulated white sugar substitute (such as Lakanto Classic Monkfruit Sweetener)
  • 1 large egg or 2 large egg whites, at room temperature
  • 1 cup fresh or frozen blueberries

Directions:

  1. Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
  2. In a large mixing bowl, combine the egg, water, applesauce, and sugar substitute. Blend together.
  3. Add Kodiak pancake mix/protein powder and baking powder. Stir until well combined.
  4. Fold in fresh or frozen blueberries. (You can add more on top of the batter and cover them slightly with the batter.)
  5. Spray the muffin tin with cooking spray or use muffin foil liners.
  6. Pour the batter into 12 muffin cups.
  7. Bake for 16-20 minutes or until a toothpick inserted comes out clean.
  8. Remove from the oven and allow them to cool for 5 minutes before removing from the muffin tin.
  9. Store the leftovers in an airtight container in the refrigerator for up to five days or in the freezer for up to two months.
  10. Sprinkle the tops with powdered sugar, if desired.
