Funeral Potatoes

Ingredients:

  • 2 lbs frozen hash browns
  • 1 cup melted butter
  • 1 can cream of chicken soup
  • 1 pint sour cream
  • 1/2 cup chopped onion
  • 2 cups shredded cheddar cheese
  • 2 cups crushed cornflakes
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine hash browns, melted butter, cream of chicken soup, sour cream, chopped onion, and shredded cheddar cheese. Mix well.
  3. Season the mixture with salt and pepper to taste.
  4. Transfer the mixture to a greased baking dish, spreading it evenly.
  5. In a separate bowl, toss crushed cornflakes with a bit of melted butter.
  6. Sprinkle the buttered cornflakes over the top of the potato mixture.
  7. Bake in the preheated oven for 45-60 minutes or until the top is golden brown and the potatoes are cooked through.
  8. Allow it to cool slightly before serving. Enjoy!
