Ingredients:

  • Blackberry Mixture:
    • 1 quart fresh or frozen blackberries, rinsed
    • 1 cup water
    • 1 cup sugar
    • 1/2 tsp salt
    • 1/2 tsp lemon extract
  • Dumplings:
    • 1 1/2 cups flour
    • 2 tsp baking powder
    • 1 tbsp sugar
    • 1/4 tsp salt
    • 1/4 tsp nutmeg
    • 2/3 cup milk

Instructions:

  1. In a large, wide saucepan, combine the blackberries, water, 1 cup sugar, salt, and lemon extract. Bring the mixture to a boil over medium heat.
  2. Once boiling, reduce the heat to low and let it simmer for 5 minutes, stirring occasionally.
  3. In a separate bowl, whisk together the flour, baking powder, 1 tbsp sugar, salt, and nutmeg until well combined.
  4. Gradually pour in the milk, stirring until a thick batter forms.
  5. Using a tablespoon, drop spoonfuls of the dumpling batter into the simmering blackberry mixture, spacing them evenly.
  6. Cover the saucepan tightly with a lid and let the dumplings simmer for 15 minutes, or until they are cooked through and fluffy.
  7. Once done, remove from heat and let it sit for a few minutes before serving.
  8. Serve the blackberry dumplings hot, topped with a scoop of vanilla ice cream or a dollop of fresh whipped cream.
