- 2 1/2 cups whole milk
- 3/4 cup granulated sugar
- 1/4 tsp salt
- 1/4 cup cornstarch
- 3 egg yolks
- 2 tbsp butter
- 1 tsp vanilla extract
For the Crust:
- 1 pre-baked 9-inch pie crust (store-bought or homemade)
For the Topping:
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Prepare the Peanut Butter Crumble:
- In a small bowl, mix the powdered sugar and peanut butter with a fork until crumbly. Set aside.
- Make the Filling:
- In a saucepan over medium heat, whisk together the milk, sugar, salt, and cornstarch. Cook, stirring constantly, until the mixture thickens (about 8-10 minutes).
- In a separate bowl, whisk the egg yolks. Slowly mix in a small amount of the hot milk mixture to temper the yolks.
- Pour the tempered yolks back into the saucepan and cook for another 2-3 minutes, stirring constantly.
- Remove from heat and stir in the butter and vanilla extract until smooth.
- Assemble the Pie:
- Sprinkle half of the peanut butter crumbles evenly over the bottom of the pre-baked pie crust.
- Pour the warm filling over the crumbles, spreading it evenly.
- Cover and refrigerate for at least 4 hours, or until set.
- Prepare the Topping:
- In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread the whipped cream over the chilled pie.
- Sprinkle the remaining peanut butter crumbles on top.
- Serve:
