  • 1/4 cup cornstarch
  • 3 egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract

For the Crust:

  • 1 pre-baked 9-inch pie crust (store-bought or homemade)

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the Peanut Butter Crumble:
    • In a small bowl, mix the powdered sugar and peanut butter with a fork until crumbly. Set aside.
  2. Make the Filling:
    • In a saucepan over medium heat, whisk together the milk, sugar, salt, and cornstarch. Cook, stirring constantly, until the mixture thickens (about 8-10 minutes).
    • In a separate bowl, whisk the egg yolks. Slowly mix in a small amount of the hot milk mixture to temper the yolks.
    • Pour the tempered yolks back into the saucepan and cook for another 2-3 minutes, stirring constantly.
    • Remove from heat and stir in the butter and vanilla extract until smooth.
  3. Assemble the Pie:
    • Sprinkle half of the peanut butter crumbles evenly over the bottom of the pre-baked pie crust.
    • Pour the warm filling over the crumbles, spreading it evenly.
    • Cover and refrigerate for at least 4 hours, or until set.
  4. Prepare the Topping:
    • In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
    • Spread the whipped cream over the chilled pie.
    • Sprinkle the remaining peanut butter crumbles on top.
  5. Serve:
    • Slice and serve chilled. Enjoy!
