Description

Garlic Lemon Baked Cod – Light, flaky cod marinated in zesty garlic & lemon, then baked to perfection. Quick, healthy, and bursting with flavor!


Ingredients

  • 4 (6 oz) cod fillets

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 lemon, zested and juiced

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp paprika (optional, for a bit of color and flavor)

  • 2 tbsp fresh parsley, chopped (for garnish)

  • Lemon slices, for serving


Instructions

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper to prevent the fish from sticking.

Step 2: Prepare the Marinade

In a small bowl, combine:

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • Zest and juice of 1 lemon

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp paprika (optional for extra color and flavor)

Mix the ingredients until well combined to form the marinade.

Step 3: Season the Cod

Place the cod fillets in the prepared baking dish.
Spoon the lemon garlic mixture evenly over each fillet, making sure to coat the top and sides of the fish.

Step 4: Bake the Cod

Bake in the preheated oven for 12–15 minutes, or until the fish is opaque and flakes easily with a fork. The cooking time may vary depending on the thickness of the fillets, so check after 12 minutes to ensure the cod is perfectly cooked.

Step 5: Garnish and Serve

Once the cod is done baking, remove it from the oven and garnish with freshly chopped parsley and lemon slices. Serve immediately with your favorite sides

Notes

  • For a cleaner presentation, serve the cod on a bed of mashed potatoes or cauliflower mash.

  • If you don’t have fresh parsley, dried parsley works as a substitute.
