Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set it aside.
In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.
Using the same skillet, sauté the onion and bell pepper for 4–5 minutes, until softened and fragrant.
Stir in the black beans, corn, diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Mix well.
Add the cooked rice to the skillet and combine until the mixture is evenly distributed.
Pour the mixture into the prepared baking dish and smooth it out.
Sprinkle the entire surface with shredded Mexican cheese.
Bake for 25–30 minutes, or until the cheese is melted, bubbly, and golden brown.
Remove from the oven and, if desired, sprinkle with chopped cilantro. Serve hot.
