Ingredients

  • 3 medium zucchinis, sliced into ¼-inch rounds

  • 1½ cups shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • ½ teaspoon garlic powder

  • Salt and pepper, to taste


Instructions

1. Preheat Oven

  • Set your oven to 375°F (190°C).

2. Prepare Zucchini

  • Wash and slice the zucchinis into ¼-inch thick rounds.

3. Season Zucchini

  • In a large bowl, toss zucchini slices with olive oil, dried oregano, garlic powder, salt, and pepper until evenly coated.

4. Layer Ingredients

  • Arrange a layer of zucchini slices in the bottom of a greased baking dish.

  • Sprinkle mozzarella and Parmesan cheese over the zucchini layer.

  • Repeat layering zucchini and cheese until all ingredients are used, finishing with a cheese layer on top.

5. Bake

  • Bake for 20–25 minutes, or until the cheese is melted, bubbly, and golden brown.

6. Cool and Serve

  • Remove from oven and let cool slightly before serving.

Notes

  • For extra richness, add a layer of ricotta cheese between zucchini layers.
