Ingredients
Scale
- 2 ripe bananas, mashed (the riper, the sweeter!)
- 1/2 cup brown sugar (adds a rich, caramel-like sweetness)
- 1/4 cup melted butter or coconut oil (for moisture and richness)
- 1 tsp vanilla extract (enhances the flavor)
- 1 1/2 cups all-purpose flour (for structure)
- 1 tsp baking powder (helps the cookies rise)
Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Wet Ingredients: In a large bowl, combine the mashed bananas, brown sugar, melted butter (or coconut oil), and vanilla extract. Mix until smooth and well combined.
- Add Dry Ingredients: Gradually add the flour and baking powder to the wet ingredients, stirring until a soft dough forms. Be careful not to overmix.
- Scoop the Dough: Use a spoon or cookie scoop to drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake: Bake for 12-15 minutes, or until the edges are lightly golden. The cookies will be soft but will firm up as they cool.
- Cool and Serve: Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely
Notes
- For a healthier version, reduce the sugar to 1/4 cup and add a tablespoon of honey or maple syrup.
- Double the recipe for larger gatherings—these cookies are always a hit!
