  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Add the mashed bananas to the butter mixture and stir until combined.
  5. In a small bowl, whisk together the flour, baking powder, and salt.
  6. Add the dry ingredients to the wet ingredients alternately with the milk, beating until just combined.
  7. Pour the batter into the prepared loaf pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely in the pan before slicing and serving.

Tips:

  • For a richer flavor, use brown sugar instead of white sugar.
  • To make the cake more moist, add 1/2 cup of sour cream or yogurt to the batter.
  • To add some extra flavor, add 1/2 cup of chopped nuts, chocolate chips, or dried fruit to the batter.
  • For a fun twist, try making banana marble cake by swirling chocolate batter into the banana batter.

Enjoy!

Variations:

  • For a Banana Nut Cake, add 1/2 cup of chopped walnuts or pecans to the batter.
  • For a Banana Chocolate Chip Cake, add 1/2 cup of chocolate chips to the batter.
  • For a Banana Coconut Cake, add 1/2 cup of coconut flakes to the batter.
  • For a Banana Streusel Cake, combine 1/2 cup of all-purpose flour, 1/4 cup of brown sugar, and 1/4 cup of butter in a small bowl. Cut the mixture together with your fingers until it forms coarse crumbs. Sprinkle the streusel topping over the batter before baking.
