Description

Golden, crispy, and irresistibly fluffy—these sweet vanilla-cinnamon fritters are the perfect way to use ripe bananas! Enjoy them for breakfast, dessert, or a cozy snack, dusted with powdered sugar.

Ingredients

Scale
  • 2 ripe bananas, mashed

  • 1 cup all-purpose flour

  • ¼ cup granulated sugar

  • 1 teaspoon baking powder

  • ½ teaspoon cinnamon (optional)

  • ¼ teaspoon salt

  • ½ teaspoon vanilla extract

  • ¼ cup milk (plus more as needed for consistency)

  • Vegetable oil, for frying

  • Powdered sugar, for dusting (optional)

Instructions

1. Prepare the Banana Batter

  1. In a large bowl, mash the ripe bananas until mostly smooth with a few small chunks for texture.

  2. Add the flour, sugar, baking powder, cinnamon (if using), salt, vanilla, and milk.

  3. Stir until a thick, spoonable batter forms. Add a splash more milk if the batter is too stiff.

2. Heat the Oil

  1. Pour 1 to 2 inches of vegetable oil into a large skillet or deep frying pan.

  2. Heat over medium-high heat until shimmering. To test readiness, drop a small bit of batter into the oil—it should sizzle immediately.

3. Fry the Fritters

  1. Using a spoon or cookie scoop, carefully drop spoonfuls of batter into the hot oil.

  2. Fry 2–3 minutes per side, flipping gently once golden brown.

  3. Avoid overcrowding the pan to maintain oil temperature and ensure even cooking.

4. Drain and Garnish

  1. Transfer the cooked fritters to a paper towel-lined plate to remove excess oil.

  2. Dust with powdered sugar, or serve with a drizzle of honey or chocolate syrup
