Ingredients

  • 1 lb ground beef (85% lean)

  • 1 ½ tsp Italian seasoning

  • Salt and pepper to taste

  • 3 Tbsp butter, divided

  • ¾ cup onion, diced

  • 1 Tbsp garlic, minced

  • 2 ½ cups beef broth

  • 1 ¼ cups uncooked long-grain white rice

  • 8 oz sliced button mushrooms

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup milk

  • ½ cup sour cream

  • 2 cups shredded cheddar cheese, divided


Instructions

Step 1: Preheat and Prep

Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.

Step 2: Brown the Ground Beef

In a large skillet or pot over medium-high heat:

  • Brown the ground beef, breaking it up as it cooks

  • Season with Italian seasoning, salt, and pepper

  • Drain excess grease and set the cooked beef aside

Step 3: Cook Aromatics and Rice

  • In the same pot, melt 2 tablespoons of butter

  • Sauté diced onions for about 5 minutes until soft

  • Add garlic and cook for another minute

  • Stir in beef broth, remaining 1 Tbsp butter, and uncooked rice

  • Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes

Step 4: Add Mushrooms and Simmer

  • Place the sliced mushrooms on top of the rice mixture (do not stir)

  • Cover and cook for another 5–10 minutes until the rice is tender

  • Remove from heat and let stand, covered, for 10 minutes

Step 5: Mix the Filling

  • Add the cooked beef, cream of mushroom soup, milk, sour cream, and 1 cup of shredded cheddar cheese

  • Mix everything until well combined

Step 6: Assemble and Bake

  • Pour the mixture into the prepared casserole dish

  • Sprinkle the remaining 1 cup of cheddar cheese over the top

  • Cover with foil and bake for 20 minutes, until hot and bubbly

  • Optional: Broil uncovered for 2–3 minutes for a golden cheese crust

Notes

  • Use sharp cheddar for maximum cheesy flavor

  • For best results, shred your own cheese—it melts more smoothly than pre-shredded

  • Let the casserole rest 5 minutes after baking before serving
