Ingredients

1 lb ground beef (85% lean)

1 ½ tsp Italian seasoning

Salt and pepper to taste

3 Tbsp butter, divided

¾ cup onion, diced

1 Tbsp garlic, minced

2 ½ cups beef broth

1 ¼ cups uncooked long-grain white rice

8 oz sliced button mushrooms
-
1 can (10.5 oz) cream of mushroom soup

½ cup milk
-
½ cup sour cream
-
2 cups shredded cheddar cheese, divided
Instructions
Step 1: Preheat and Prep
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.
Step 2: Brown the Ground Beef
In a large skillet or pot over medium-high heat:

Brown the ground beef, breaking it up as it cooks

Season with Italian seasoning, salt, and pepper

Drain excess grease and set the cooked beef aside
Step 3: Cook Aromatics and Rice

In the same pot, melt 2 tablespoons of butter

Sauté diced onions for about 5 minutes until soft

Add garlic and cook for another minute

Stir in beef broth, remaining 1 Tbsp butter, and uncooked rice

Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes
Step 4: Add Mushrooms and Simmer

Place the sliced mushrooms on top of the rice mixture (do not stir)

Cover and cook for another 5–10 minutes until the rice is tender

Remove from heat and let stand, covered, for 10 minutes
Step 5: Mix the Filling

Add the cooked beef, cream of mushroom soup, milk, sour cream, and 1 cup of shredded cheddar cheese

Mix everything until well combined
Step 6: Assemble and Bake

Pour the mixture into the prepared casserole dish

Sprinkle the remaining 1 cup of cheddar cheese over the top

Cover with foil and bake for 20 minutes, until hot and bubbly

Optional: Broil uncovered for 2–3 minutes for a golden cheese crust
