Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk or buttermilk
  • ½ cup unsalted butter, melted
  • ½ cup brown sugar
  • 1 tbsp cinnamon
  • ¼ cup crushed Biscoff cookies
  • ½ cup Biscoff cookie butter (melted)
  • ½ cup caramel sauce
  • ½ cup heavy cream
  • ¼ cup crushed Biscoff cookies (for garnish)

Instructions

Step 1: Prepare the Cake Batter

  1. Preheat oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each.
  5. Stir in vanilla extract.
  6. Alternate adding flour mixture and milk, beginning and ending with flour. Mix until just combined.
  7. Pour batter into the prepared dish.

Step 2: Make the Cinnamon Swirl

  1. In a small bowl, combine melted butter, brown sugar, cinnamon, and crushed Biscoff cookies.
  2. Drizzle over the cake batter and swirl with a knife for a marbled effect.

Step 3: Bake the Cake

  1. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let cool slightly while preparing the topping.

Step 4: Prepare the Biscoff Caramel Topping

  1. In a saucepan over low heat, whisk together Biscoff cookie butter, caramel sauce, and heavy cream.
  2. Stir until smooth and slightly thickened.
  3. Drizzle over the warm cake.

Step 5: Serve & Enjoy!

  • Garnish with crushed Biscoff cookies.
  • Slice and serve warm for the best experience!

Notes

  • Adjust the sweetness by reducing the sugar in the batter if you prefer a less sweet cake.
  • If you love extra crunch, increase the amount of crushed Biscoff cookies in the topping.
  • Experiment with different milk alternatives like almond milk for a dairy-free option.
