  • 200g Biscoff biscuits, crushed

  • 100g unsalted butter, melted

  • 397g sweetened condensed milk

  • 200g milk chocolate

  • 100g white chocolate

  • Biscoff spread, for drizzling (about 2–3 tablespoons)


Instructions

Step 1: Make the Biscoff Biscuit Base

Crush the Biscoff biscuits into fine crumbs using a food processor or rolling pin. Mix the crumbs with the melted butter until fully coated. Press the mixture firmly into the base of a lined 8×8-inch traybake tin. Chill while preparing the next layer.

Step 2: Prepare the Caramel Layer

In a saucepan, gently heat the sweetened condensed milk over medium heat, stirring constantly to prevent burning. Cook until the mixture thickens and turns a golden caramel color (about 10 minutes). Pour the caramel over the chilled biscuit base and smooth out evenly. Let it cool and set at room temperature.

Step 3: Add the Chocolate Topping

Melt the milk chocolate in a heatproof bowl over simmering water or in short microwave bursts. Pour over the caramel layer and spread evenly. Melt the white chocolate and drizzle over the milk chocolate. Warm a few spoonfuls of Biscoff spread and drizzle it on top, using a skewer to swirl for a marbled effect.

Step 4: Chill to Set

Place the traybake in the refrigerator for at least 2 hours, or until the chocolate is fully set and firm.

Step 5: Slice and Serve

Once set, remove from the tray and cut into 16 squares. Store in an airtight container in the fridge for up to 5 days
