Description

This hearty Southern-style casserole brings all the comfort of classic biscuits and sausage gravy into one easy, oven-baked dish. With fluffy buttermilk biscuits, savory sausage, and a rich, peppery gravy, it’s the perfect make-ahead breakfast or brunch for a crowd. Simple, satisfying, and loaded with down-home flavor.

Ingredients

Scale
  • 1 (16 oz) can refrigerated buttermilk biscuits, halved

  • 1 lb ground breakfast sausage

  • 3 tablespoons all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 2 ½ cups whole milk

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 350°F (175°C).

  • Lightly grease a 9×13-inch baking dish with butter or nonstick spray.

Step 2: Par-Bake the Biscuits

  • Cut each biscuit in half.

  • Arrange half the biscuit halves evenly across the bottom of the dish.

  • Bake for 10 minutes, just until lightly golden.

Step 3: Brown the Sausage

  • In a skillet over medium heat, cook the ground sausage until fully browned and crumbled.

  • Do not drain unless excess grease remains.

Step 4: Make the Sausage Gravy

  • Sprinkle flour over the sausage and stir to coat.

  • Cook for 2–3 minutes to remove the raw flour taste.

  • Gradually whisk in the milk, stirring constantly to avoid lumps.

  • Add salt and black pepper, and continue to simmer until the mixture thickens (about 5 minutes).

Step 5: Assemble the Casserole

  • Pour the hot sausage gravy evenly over the pre-baked biscuits in the dish.

  • Top with the remaining biscuit halves.

Step 6: Final Bake

  • Return the dish to the oven and bake for 25–30 minutes, or until biscuits on top are golden and the casserole is bubbling.

Step 7: Cool and Serve

  • Let the casserole cool for 5–10 minutes before slicing.

  • Serve warm with a sprinkle of fresh herbs, if desired.
