Instructions
1. Prepare the Crust

- Grease a 9-inch springform pan and line the bottom with parchment paper.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
- Press mixture firmly into the bottom of the pan.
- Bake for 10 minutes. Remove from oven and cool.
2. Make the Cheesecake Filling
- In a large mixing bowl, beat softened cream cheese and sugar until smooth and creamy.
- Add vanilla extract and mix well.
- Add eggs one at a time, beating well after each.
- Mix in sour cream, heavy cream, and flour until the batter is smooth and well combined.

- Heat ½ cup heavy cream in a saucepan over medium heat until just simmering.
- Remove from heat and add chocolate chips.
- Stir until the chocolate is completely melted and the mixture is smooth.
5. Finish the Cheesecake
- Pour the chocolate glaze evenly over the chilled cheesecake.
- Spread gently with a spatula.
- Let the glaze set for about 30 minutes before serving.
