Description

Broccoli Cheddar Chicken Rollups are a delicious twist on classic stuffed chicken. Tender chicken breasts are filled with a creamy, cheesy broccoli mixture, rolled up, and baked in a savory broth until juicy and golden. It’s a comforting, family-friendly dinner that’s both flavorful and fun to make—perfect for weeknights or impressing guests with minimal effort.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 1½ cups broccoli florets, finely chopped

  • 1 cup shredded cheddar cheese

  • 4 oz cream cheese, softened

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon olive oil

  • ½ cup chicken broth

Instructions

Step 1: Preheat and Prep

  • Preheat oven to 375°F (190°C).

  • Lightly grease a baking dish with olive oil or non-stick spray.

Step 2: Make the Filling

  • In a medium bowl, mix together:

    • Chopped broccoli

    • Shredded cheddar cheese

    • Softened cream cheese

    • Garlic powder

    • Onion powder

    • Paprika

    • Salt and pepper

Step 3: Flatten and Stuff the Chicken

  1. Pound each chicken breast to about ¼-inch thickness using a meat mallet or rolling pin (place between plastic wrap or in a zip-top bag).

  2. Divide the broccoli-cheddar mixture evenly among the chicken breasts.

  3. Roll each one up tightly and secure with toothpicks.

Step 4: Bake the Rollups

  1. Place chicken rollups seam-side down in the prepared baking dish.

  2. Drizzle olive oil over the top and pour chicken broth into the dish around the rollups.

  3. Cover with foil and bake for 25 minutes.

  4. Remove foil and bake an additional 10 minutes, or until golden and cooked through (internal temp should reach 165°F).

Notes

  • Use sharp cheddar for bold flavor, or mix in mozzarella for a stretchier filling.

  • This recipe is ideal for meal prepping, low-carb meal plans, or even holiday dinners when you want something lighter but still indulgent.
