  • Yield: 18-20 cookies 1x

Description

These Brownie Cookies combine the best of both worlds—chewy like a brownie with the crisp edges of a cookie. Rich, chocolatey, and packed with semi-sweet chocolate chips, they are the perfect treat for any chocolate lover. Enjoy them warm for an extra gooey experience!

Ingredients

Scale
  • 1/2 cup unsalted butter, melted (for richness and moisture)
  • 1 cup granulated sugar (adds sweetness and chewiness)
  • 2 large eggs (for structure and richness)
  • 1 tsp vanilla extract (enhances the flavor)
  • 1 cup all-purpose flour (for structure)
  • 1/2 cup unsweetened cocoa powder (for deep chocolate flavor)
  • 1/2 tsp baking powder (helps the cookies rise slightly)
  • 1/4 tsp salt (balances the sweetness)
  • 1 cup semi-sweet chocolate chips (for melty pockets of chocolate)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Wet Ingredients:
    • In a large bowl, whisk together the melted butter and granulated sugar until well combined.
    • Add the eggs and vanilla extract, mixing until smooth.
  3. Add Dry Ingredients:
    • Sift in the flour, cocoa powder, baking powder, and salt. Stir until just combined—be careful not to overmix.
    • Fold in the chocolate chips until evenly distributed.
  4. Scoop the Dough:
    • Drop tablespoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake:
    • Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  6. Cool:
    • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • For a lighter version, reduce the sugar to 3/4 cup and use dark chocolate chips.
  • Double the recipe for larger gatherings—these cookies disappear fast!
