These Buckeye Brownie Cookies are a delightful combination of rich chocolate and creamy peanut butter, perfect for satisfying your sweet tooth. The recipe is simple, making it a great choice for an easy dessert or a fun activity to do with kids.

Ingredients

  • 1 box fudge brownie mix (19.5 ounce or family size)
  • 2 teaspoons vanilla extract
  • 1 teaspoon cornstarch
  • 1/4 cup butter, melted
  • 4 ounces cream cheese, softened
  • 1 egg
  • 1 cup powdered sugar
  • 1 cup creamy peanut butter
  • 4 ounces semi-sweet chocolate chips

Preparation

  1. Preheat and Prepare the Dough:
    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, use a hand mixer to combine the brownie mix, vanilla extract, cornstarch, melted butter, cream cheese, and egg. The dough will be sticky.
  2. Shape and Bake Cookies:
    • Scoop the dough onto an ungreased cookie sheet, smoothing the edges to form round cookies.
    • Bake in the preheated oven for 12 minutes.
  3. Make Peanut Butter Balls:
    • While cookies are baking, mix the powdered sugar and peanut butter together in a separate bowl.
    • Form the mixture into 1-inch balls, one for each cookie, and set aside.
  4. Combine Cookies with Peanut Butter:
    • Once the cookies are out of the oven, immediately press a peanut butter ball lightly into the center of each cookie. The heat will soften the peanut butter.
  5. Cool and Add Chocolate:
    • Let the cookies cool for about 5 minutes before transferring them to a wire rack.
    • Melt the chocolate chips in a microwave-safe bowl, using 30-second increments, stirring until smooth.
    • Spoon about 1/2 tablespoon of melted chocolate over the peanut butter ball on each cookie, covering it completely.
  6. Finalize:
    • Allow the chocolate to set. You can place the cookies in the refrigerator to speed up this process.
  7. Storage:
    • Store your Buckeye Brownie Cookies in an airtight container to keep them fresh.

Enjoy these decadent treats whenever you crave a burst of peanut butter and chocolate!
