Buttery Ritz Cracker Chicken Casserole

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups Ritz crackers, crushed
  • 1/2 cup unsalted butter, melted
  • 1 can (10.75 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup grated cheddar cheese

Directions:

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, mix crushed Ritz crackers with melted butter.
  3. Spread half of the cracker mixture in the bottom of a greased 9×13 inch baking dish.
  4. Place chicken breasts on top of the cracker layer.
  5. In another bowl, combine cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper.
  6. Pour this mixture over the chicken.
  7. Sprinkle with grated cheddar cheese.
  8. Top with the remaining cracker mixture.
  9. Bake for 35-40 minutes or until the chicken is cooked through and the top is golden brown.
