Ingredients:
- 16 ounces of spicy beef sausage
- 1 onion, roughly chopped
- 4 cloves of garlic, minced
- 1 green bell pepper, chopped
- 1 cup thinly sliced celery
- 1 head of green cabbage, chopped
- 1 can (14 ounces) of diced tomatoes
- 1 cup of chicken broth
- 1/2 cup of water
- 1 cup of brown basmati rice
- 1 tablespoon of chili powder
- 1/2 teaspoon of salt
- 1 teaspoon of paprika
- 1/2 teaspoon of ground cumin
- A pinch of cayenne pepper
- A pinch of freshly ground black pepper
Instructions:
- Brown the spicy beef sausage in a large pot with chopped onion and minced garlic.
- Add chopped green bell pepper and celery to the pot and cook for an additional 3 minutes.
- Combine diced tomatoes, chicken broth, water, brown basmati rice, and all the seasonings (chili powder, salt, paprika, ground cumin, cayenne pepper, and black pepper) into the pot.
- Bring the mixture to a boil, then cover and reduce heat to low.
- Let it cook for about 40 to 50 minutes, stirring occasionally, until the rice is tender.
