  • 1 sheet puff pastry, thawed (for a flaky, buttery base)
  • ½ cup basil pesto (store-bought or homemade)
  • 1 cup cherry tomatoes, halved (for a juicy, fresh bite)
  • 1 cup fresh mozzarella pearls (or diced fresh mozzarella)
  • Fresh basil leaves, for garnish (adds a pop of color and freshness)
  • Balsamic glaze, for drizzling (for a tangy, sweet finish)
  • Salt and pepper to taste (to season)

Instructions

 Preheat the Oven:

  • Preheat your oven to 400°F (200°C).

 Prepare the Puff Pastry:

  • Roll out the puff pastry sheet on a lightly floured surface.
  • Cut the pastry into squares or circles, depending on your preference.

 Assemble the Tarts:

  • Place the pastry pieces on a baking sheet lined with parchment paper.
  • Spread a thin layer of basil pesto over each pastry square.
  • Arrange the cherry tomato halves and mozzarella pearls on top of the pesto.
  • Season lightly with salt and pepper.

 Bake:

  • Bake for 15-18 minutes, or until the pastry is golden brown and the cheese is melted.

 Garnish and Serve:

  • Remove the tarts from the oven and let them cool slightly.
  • Garnish with fresh basil leaves and drizzle with balsamic glaze.
  • Serve warm or at room temperature.

Notes

  • For a glossy finish, brush the pastry edges with a beaten egg before baking.
  • If you don’t have balsamic glaze, reduce balsamic vinegar in a saucepan until thickened.
