- 1 sheet puff pastry, thawed (for a flaky, buttery base)
- ½ cup basil pesto (store-bought or homemade)
- 1 cup cherry tomatoes, halved (for a juicy, fresh bite)
- 1 cup fresh mozzarella pearls (or diced fresh mozzarella)
- Fresh basil leaves, for garnish (adds a pop of color and freshness)
- Balsamic glaze, for drizzling (for a tangy, sweet finish)
- Salt and pepper to taste (to season)
Instructions
Preheat the Oven:
- Preheat your oven to 400°F (200°C).
Prepare the Puff Pastry:
- Roll out the puff pastry sheet on a lightly floured surface.
- Cut the pastry into squares or circles, depending on your preference.
Assemble the Tarts:
- Place the pastry pieces on a baking sheet lined with parchment paper.
- Spread a thin layer of basil pesto over each pastry square.
- Arrange the cherry tomato halves and mozzarella pearls on top of the pesto.
- Season lightly with salt and pepper.
Bake:
- Bake for 15-18 minutes, or until the pastry is golden brown and the cheese is melted.
Garnish and Serve:
- Remove the tarts from the oven and let them cool slightly.
- Garnish with fresh basil leaves and drizzle with balsamic glaze.
- Serve warm or at room temperature.
Notes
- For a glossy finish, brush the pastry edges with a beaten egg before baking.
- If you don’t have balsamic glaze, reduce balsamic vinegar in a saucepan until thickened.
