Description

These Cauliflower Breadsticks are a low-carb, gluten-free twist on cheesy breadsticks! Made with riced cauliflower, mozzarella, and Parmesan, they’re crispy, tender, and perfect with warm marinara.


Ingredients

  • 1 medium head of cauliflower, riced (approximately 3 cups)

  • 1 large egg

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon garlic powder

  • Salt and black pepper to taste

  • Optional toppings: additional mozzarella, chopped fresh parsley, marinara sauce for dipping


Instructions

1. Prepare the Cauliflower Base

  • Preheat your oven to 400°F (200°C).

  • Rice the cauliflower using a food processor or grater.

  • Microwave the riced cauliflower for 4–5 minutes until tender.

  • Let it cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible to avoid sogginess.

2. Mix the Ingredients

  • In a mixing bowl, combine the cooked cauliflower, egg, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and pepper.

  • Stir until the mixture is fully combined and forms a thick dough.

3. Shape and Bake

  • Line a baking sheet with parchment paper.

  • Press the cauliflower mixture into a rectangular shape, about 1/2-inch thick.

  • Bake for 20–25 minutes, or until golden and firm to the touch.

4. Add Cheese and Finish

  • Sprinkle extra mozzarella over the top and return to the oven.

  • Bake an additional 5 minutes, or until the cheese is melted and bubbly.

5. Slice and Serve

  • Let cool slightly before slicing into breadsticks.

  • Serve warm with marinara or your favorite dipping sauce.

Notes

  • Best enjoyed fresh from the oven but also makes a great make-ahead snack.

  • Double the batch for meal prep or entertaining.

  • Feel free to mix in other cheeses like gouda or provolone for flavor variety
