Cheesy Beef Taco Pasta 

Ingredients:

  • 3 pounds ground beef
  • 1 box small shells pasta
  • 1 pack Velveeta cheese
  • Handful of sharp cheddar cheese
  • 2 packs taco seasoning
  • 1 can original Rotel
  • 1/2 cup milk

Instructions:

  1. Prepare Ingredients:
    • Brown the ground beef in a large skillet over medium heat. Once browned, drain excess fat and set aside.
    • In a separate pot, boil water for the shells pasta. Cook the pasta according to the package instructions, then drain and set aside.
  2. Melt Velveeta Cheese:
    • In the same skillet used for browning the beef, cut up the full block of Velveeta cheese and place it in the skillet.
    • While the cheese is melting, add the milk and continue to mix until combined and smooth.
  3. Combine Ingredients:
    • Add the cooked shells pasta to the melted cheese in the skillet, followed by the cooked ground beef. Mix well to combine.
  4. Season and Mix:
    • Sprinkle the taco seasoning over the pasta and beef mixture. Stir until the seasoning is evenly distributed.
    • Add the can of original Rotel to the skillet and mix well.
  5. Add Cheddar Cheese:
    • Once the pasta, beef, and Rotel are well combined, add a handful of sharp cheddar cheese to the skillet. Mix until the cheese is melted and incorporated into the dish.
  6. Serve:
    • Once everything is heated through and the cheese is melted, serve the Cheesy Beef Taco Pasta hot.
    • Optionally, garnish with additional shredded cheddar cheese or chopped cilantro, if desired.
