Description

Cheesy Garlic Butter Corn on the Cob is a flavorful side dish coated in rich garlic butter, melty cheese, and fresh parsley. Perfect for BBQs, gatherings, or a quick snack, it’s irresistibly cheesy and buttery!

Ingredients

Scale
  • 4 ears of corn, husked
  • 4 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • ¼ cup grated Parmesan cheese
  • ¼ cup shredded mozzarella or cheddar cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon mayonnaise (optional, for extra creaminess)

Instructions

1. Cook the Corn:

Boiling Method:

  • Bring a large pot of water to a boil.
  • Add husked corn and cook for 5-7 minutes until tender.

Grilling Method:

  • Preheat grill to medium-high heat.
  • Grill corn for 8-10 minutes, turning occasionally, until slightly charred and tender.

2. Make the Garlic Butter:

  • In a small bowl, mix melted butter, minced garlic, salt, black pepper, and paprika.
  • Stir well to combine.

3. Coat the Corn:

  • Brush each ear of hot corn generously with the garlic butter mixture.

4. Add the Cheese:

  • Sprinkle grated Parmesan evenly over the corn.
  • Top with shredded mozzarella or cheddar.
  • If desired, place under a broiler for 1-2 minutes to melt the cheese, or let it melt naturally on the warm corn.

5. Garnish & Serve:

  • Sprinkle with chopped fresh parsley.
  • Serve immediately while warm.
  • Optional: Add a squeeze of lime for a tangy twist!

Notes

  • This recipe works great for corn on the cob or off—simply cut the kernels off after cooking!
  • Make it kid-friendly by using mild cheese and skipping the paprika.
