  • 4 to 6 medium Russet potatoes

  • 1 packet (1 ounce) taco seasoning

  • ½ cup water

  • 1 cup shredded cheese (cheddar or your choice)

  • Toppings: sour cream, green onions, salsa (optional)


Instructions

Step 1: Prepare the Potatoes

  1. Preheat your oven to 400°F (200°C).

  2. Wash and scrub the potatoes thoroughly.

  3. Pierce each potato several times with a fork.

  4. Place them on a baking sheet and bake for 45–50 minutes, or until tender.

Step 2: Cook the Beef

  1. In a skillet over medium heat, cook the ground beef until browned and fully cooked.

  2. Drain any excess grease.

  3. Add the taco seasoning and water, then stir to combine.

  4. Simmer for 5 minutes, allowing the mixture to thicken.

Step 3: Assemble the Dish

  1. Once the potatoes are baked, let them cool slightly.

  2. Cut each one down the middle and gently fluff the insides with a fork.

  3. Spoon the taco meat mixture into each potato.

  4. Top with shredded cheese.
