Ingredients

  • 2 cups cooked, shredded chicken

  • 2 cups ricotta cheese

  • ½ cup grated Parmesan cheese

  • 3 cups Alfredo sauce (store-bought or homemade)

  • 1 tbsp chopped fresh parsley

  • Salt and black pepper to taste


Instructions

1. Prepare the Oven and Baking Dish:

  • Preheat your oven to 375°F (190°C).

  • Lightly grease a 9×13 inch baking dish and set it aside.

2. Cook the Lasagna Noodles:

  • Boil the noodles until al dente, according to package instructions.

  • Drain and lay them out in a single layer on a clean surface or parchment paper to prevent sticking.

3. Make the Ricotta Filling:

  • In a large bowl, mix:

    • Ricotta cheese

    • Egg

    • Parmesan cheese

    • Parsley

    • Salt and pepper to taste

  • Stir until the mixture is smooth and evenly blended.

4. Assemble the Roll-Ups:

  • Spread about ¼ cup of ricotta mixture over each noodle.

  • Top with a layer of shredded chicken and a sprinkle of mozzarella cheese.

  • Carefully roll each noodle and place seam-side down in the prepared dish.

5. Add Sauce and Cheese:

  • Pour the Alfredo sauce evenly over all the roll-ups.

  • Sprinkle with remaining mozzarella cheese for a cheesy topping.

6. Bake:

  • Cover with aluminum foil and bake for 20 minutes.

  • Remove the foil and bake an additional 10 minutes until the top is golden and bubbly.
