Ingredients
-
4 boneless, skinless chicken breasts
-
1 tablespoon olive oil
-
Salt and pepper to taste
-
1 (12 oz) box seasoned stuffing mix
-
½ cup chicken broth
-
1 can (10.5 oz) cream of chicken soup
-
½ cup sour cream (optional)
-
1 cup shredded cheddar cheese
Instructions
Step 1: Preheat and Prep
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray.
Step 2: Sear the Chicken
-
Season chicken breasts with salt and pepper.
-
In a large skillet, heat olive oil over medium heat.
-
Sear chicken for 2–3 minutes per side until lightly browned. (They don’t need to be fully cooked yet.)
Step 3: Prepare the Stuffing
-
Make stuffing according to package directions.
-
Spread the prepared stuffing evenly on the bottom of your baking dish.
Step 4: Assemble the Casserole
-
Place seared chicken breasts on top of the stuffing.
-
In a bowl, mix cream of chicken soup, chicken broth, and sour cream (if using).
-
Pour the creamy mixture evenly over the chicken.
-
Sprinkle shredded cheddar cheese over the top.
Step 5: Bake
-
Cover the dish with aluminum foil and bake for 25–30 minutes.
-
Remove foil and bake uncovered for an additional 10–15 minutes or until chicken reaches 165°F (74°C) and cheese is melted.
Step 6: Rest and Serve
Let the casserole cool for 5–10 minutes before serving to allow the flavors to settle.
Notes
-
For a crispier topping, broil the casserole for 2–3 minutes after baking.
-
If your stuffing seems dry, add an extra splash of chicken broth before baking.
