Ingredients for Chicken Chess with Vegetables

  • 2 tablespoons of olive oil
  • 2 medium onions, cubed
  • 2 crushed garlic cloves
  • 500g skinless chicken breast, cut into cubes
  • Salt to taste
  • 1 green bell pepper, cubed
  • 1 red bell pepper, cubed
  • 1 yellow bell pepper, cubed
  • 1 cup of canned mushrooms (halved)
  • 1/4 cup of soy sauce
  • 1 tablespoon of cornstarch
  • 1/2 cup of water
  • 2 tablespoons of toasted peanuts

Instructions

  1. In a large skillet or pot, mix half of the olive oil, onions, and garlic, and let them sauté.
  2. Remove and place them on a plate.
  3. In the same skillet, add salt, the remaining olive oil, and sauté the bell peppers and mushrooms for 5 minutes.
  4. Remove and transfer to another plate.
  5. In the same skillet, add the chicken and fry it until golden.
  6. Return all the ingredients to the skillet, mix well with a wooden spoon, and sauté for another 2 minutes.
  7. In a cup, mix soy sauce, cornstarch, and water.
  8. Stir well and add the chicken mixture.
  9. Cook, stirring constantly, until a thick sauce forms.
  10. Transfer to a serving dish, sprinkle with peanuts, and serve hot.
