Ingredients:
For the Cake Batter:
- 1 tablespoon cocoa powder
- 3 eggs
- 2 tablespoons all-purpose flour
- 3 tablespoons sugar
For the Chocolate Mousse:
- 1/2 cup sugar (tea)
- 230 g semisweet chocolate, chopped
- Bittersweet Chocolate Shavings for decoration
- 1 can fresh cream
- 5 tablespoons water
- 1/2 packet (6 g) flavorless powdered gelatin
- 3 egg whites
Instructions:
Cake Batter:
- In a blender, beat the eggs until they double in volume.
- Add the sugar and continue beating until it becomes fluffy.
- Gently fold in the all-purpose flour and cocoa powder to obtain a cake batter.
- Pour the batter into a greased and floured removable-bottom mold.
- Bake in a preheated oven at 200°C (392°F) for 20 minutes.
- Remove from the oven and set aside.
Chocolate Mousse:
- In a saucepan, melt the chocolate in a double boiler for a few minutes.
- Add the fresh cream, mix well until smooth and creamy, and set aside.
- In another saucepan, add water to the gelatin and heat in a double boiler until it dissolves completely.
- Add the dissolved gelatin to the creamy chocolate mixture, mix well, and set aside.
- In another saucepan, mix the egg whites and sugar, and cook over low heat, stirring constantly, for about 3 minutes, removing the saucepan from the heat briefly every minute to prevent the egg whites from cooking.
- Transfer the egg whites to a mixer and beat them until they double in volume.
- Gently fold the beaten egg whites into the creamy chocolate mixture.
- Cover the cake batter with the Chocolate Mousse and refrigerate for at least 4 hours.
- Unmold from the removable-bottom mold just before serving.
