Instructions
Step 1: Prepare the Brownie Base
-
Preheat oven to 350°F (175°C). Line an 8-inch round springform pan with parchment paper.
-
In a large bowl, whisk together melted butter, sugar, eggs, and vanilla until smooth.
-
Sift in flour, cocoa powder, salt, and baking powder. Stir just until combined—do not overmix.
-
Pour batter into the prepared pan and bake for 20–25 minutes, or until a toothpick comes out with moist crumbs.
-
Allow to cool completely before adding the next layer.
Step 2: Make the Cheesecake Filling
-
In a mixing bowl, beat cream cheese, powdered sugar, and vanilla until smooth and creamy.
-
In a separate bowl, whip heavy cream until stiff peaks form.
-
Gently fold the whipped cream into the cream cheese mixture until well blended.
-
Spread the cheesecake mixture evenly over the cooled brownie base.
-
Refrigerate for at least 2 hours, or until fully set.
Step 3: Prepare the Ganache
-
Heat heavy cream in a small saucepan until hot but not boiling.
-
Pour over the chocolate chips and let sit for 2 minutes.
-
Stir until smooth and glossy. Allow to cool slightly before using.
Step 4: Make Chocolate-Covered Strawberries
-
Melt chocolate with coconut oil or butter until smooth and glossy.
-
Dip strawberries one by one, letting excess chocolate drip off.
-
Place on parchment-lined plate and refrigerate for 10 minutes, or until set.
Step 5: Assemble and Serve
-
Drizzle the set cheesecake layer with the cooled ganache.
-
Top each slice with a chocolate-covered strawberry.
