Ingredients:
- 1/2 cup peanut butter
- 3 tablespoons soft butter
- 1 teaspoon vanilla extract
- 1 cup Rice Krispies cereal
- 1/2 cup pecans, chopped
- 1 cup shredded coconut
- 1 package (12 ounces) chocolate chips
- 1 ounce sweet chocolate, chopped
Directions:
- In a large bowl, mix together the peanut butter, soft butter, and vanilla extract until well combined.
- Stir in the Rice Krispies cereal, chopped pecans, and shredded coconut until evenly distributed.
- Refrigerate the mixture for about 30 minutes to firm up.
- After chilling, shape the mixture into balls using your hands and place them on a parchment-lined baking sheet.
- Refrigerate the balls for an additional 1 hour to set.
- In a double boiler, melt the chocolate chips and sweet chocolate until smooth, stirring frequently.
- Using a fork, dip each peanut butter ball into the melted chocolate to coat it completely.
- Place the chocolate-coated balls back onto the parchment paper-lined baking sheet.
