  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 tablespoon all-purpose flour

  • ¼ cup unsalted butter, melted

  • ¼ cup granulated sugar

  • 1 teaspoon ground cinnamon


Instructions

1. Prepare the Crust

  • Preheat oven to 350°F (175°C).

  • In a bowl, combine flour, sugar, softened butter, salt, egg yolk, and vanilla extract.

  • Mix until the dough comes together.

  • Press the dough evenly into the bottom of a greased 9×9-inch baking pan.

  • Bake for 10 minutes, or until lightly golden.

2. Make the Cheesecake Filling

  • While the crust bakes, beat cream cheese in a large bowl until smooth.

  • Gradually add sugar and blend well.

  • Add eggs one at a time, mixing thoroughly after each.

  • Stir in vanilla extract and flour until smooth.

3. Assemble the Bars

  • Remove the crust from the oven and let it cool slightly.

  • Pour cheesecake filling over the crust and spread evenly.

  • Bake for 25–30 minutes, or until the filling is mostly set but slightly jiggly in the center.

4. Prepare the Churro Topping

  • Mix melted butter, sugar, and cinnamon in a small bowl.

  • Remove cheesecake from oven and drizzle topping evenly over the surface.

  • Use a spatula to spread the topping gently.

5. Final Bake and Chill

  • Return the pan to the oven and bake for an additional 10 minutes to set the topping.

  • Allow bars to cool to room temperature, then refrigerate for at least 2 hours before slicing.
